With Irish Whiskey hitting new peaks in popularity, Poitín is gaining momentum as well.
You can sip Poitín straight or on the rocks, but it reveals a whole new set of possibilities when you use it in cocktails. The guys from Glendalough kindly shared the recipes created in their Poitín cocktail competition - we're sharing our favourites and all you have to do is get inspired and start mixing. 3, 2, 1 - go!
Muddle the blackberries, mint and thyme in a shaker tin, add the lemon juice, honey and finally the Glendalough Poitín. Shake well with ice and double strain into a chilled cocktail glass and garnish with a herbal blackberry flower.

Orchard Martini recipe is by Alan Glynn from 37 Dawson in Dublin and should not be difficult to re-create. Just combine all of the ingredients in a shaker with ice. Serve in a collins glass.
Stir all the ingredients in a mixing glass, strain over cubed ice into an old fashioned glass, garnish with a sprig of lavender.
