The most-sherried jingle of all the Dingles.

A great guy once said there is no genius without some touch of madness and three friends Oliver Hughes, Liam LaHart, and Peter Mosley must have been thinking the same thing when they went into craft brewing back in the 90's in Ireland. Two mad ideas are better than one, though, and after setting up the beloved Porterhouse Brewing Company, it was time for an artisan distillery. At a time when 3 major brands ruled the Irish distilling world, The Dingle Whiskey Distillery was born in an old Fitzgerald sawmill in the Milltown district of Dingle in southwest Ireland. How did they do it? By choosing quality over quantity and the 3 custom-made copper pot stills with a special boil ball – not to be mistaken with a ball boil, widely popular in the 1700s – didn’t hurt either.

The first permanent Whiskey release in the Dingle family, Dingle Single Malt 2021 Release is a triple distilled beauty. This Dingle is a child of a loving marriage between 61% of 1st fill Pedro Ximenez casks and 39% of 1st fill Bourbon casks, both aged 6-7 years. It’s not chill-filtered and naturally, you won’t find any added color – it simply doesn’t need it. The most sherried Dingle expression, it strikes an intriguing balance with lime zest and chopped mint on the nose and apples, caramel, raisins, and vanilla on the palate.

Yum! This is really good, very...

Yum! This is really good, very lime-y on the nose and if you pay close attention I can also smell mincemeat. Very nice!

Super subtle in the mouth but very structured. Love it
