This Whisky-Gin hybrid is almost a Genever… but better.

Paul Hletko’s grandfather lost his Czechoslovak brewery to the Nazi’s in World War II. Paul was doing home brewing and wanted to go into business for himself — taking his family history and experience to heart and founding FEW Spirits in 2011. Ever the rebel, he opened his "grain to glass" craft business in Evanston, Illinois — the birthplace of the temperance movement — from a small building whose only entryway is through a back alley. And we are all glad he did. Over the last five years he has grown to three Whiskeys, three Gins, and seven employees whose motto is "By the Few, for the Few."

FEW Gin starts with a base grain Spirit that has the base character cooked out of it. It starts more like a raw grain Whiskey. Then they infuse their botanicals, and one of those is hops. I am NOT saying that FEW Gin tastes like either Whiskey or Beer. I AM saying that some of the underlaying character of the grain and hops is "felt" in the Gin, making it really unique. And FEW Barrel-Aged Gin is aged in oak… just like Whiskey. It almost warrants its own new sub-category in the wonderful world of Gin-iness. Something like Gin-ever-isky… or maybe not. We call it stunningly delicious.

The aromas a rich and spicy with notes of black pepper, lemon zest, and a dash of pine.

Flavor / Taste / Palate
The flavor is surprisingly rich as well with notes of shortbread, ginger, pine, herbals, and berry compote.

Finish
The finish is long and hints at gingerbread and strawberries.
