The George Dickel distillery was founded in 1877 and later bought by George A. Dickel in 1884. Their Whisky is made primarily in the distillery at Cascade Hollow, Tennessee and bottled in Stamford and Canada. George Dickel believed his spirit was as fine as the one from Scotland so he dropped the “e” in Whiskey and used the traditional Scottish spelling Whisky.

He also believed that Whisky made in the winter is smoother than one made during the summer—which resulted in making George Dickel the only Tennessee Whisky that is chilled before it is put into the charcoal mellowing vats. This ensures the filtering of oils and fatty acids, making for a lighter and smoother dram.
 
George Dickel Superior No. 12 is believed by many to be the gold standard of Tennessee Whisky. It is made from a combination of older Whiskies selected by the master distiller. The Superior No. 12 is made from a mash bill of barley, corn, rye, wheat and other grains. It was awarded with two Silver Medals, two Gold Medals and one Double Gold Medal in the San Francisco World Spirits Competition.
