Founded in 1887, with machinery bought from the Cardhu Distillery, William Grant created Glenfiddich. Glenfiddich is taking a different turn on the Solera method here. Remember that the Solera method is where the barrel or vat is only half emptied with each pass, then it is refilled. This way each new batch is half of the batch that preceded it, and so on, and so on … theoretically forever. Which is why the Italians call the process “perpetua.” For Glenfiddich Select Cask, they are using the marrying vat as a point of blending their single-malt aged in three different wood types: virgin European oak, French burgundy wine casks, and ex-Bourbon barrels.
What comes out of the bottle is now a very complex, very consistent, mixed wood and mixed age Whisky. It is soft, smooth, and has a superior mouth-feel that will really stand out. But the aroma with seduce you on this one … something like fresh flowers after the rain. Don’t mix it. Pour it neat, maybe a splash, linger at the nose, then savor.
