Hibernia Distillers is fairly new, being founded in 2014 by brothers Conor and Alan Hyde in the wee town of Skibbereen, Ireland. But in a few short years this small-town maker of traditional Single Malt and Single Grain Irish Whiskey is rocking the world with products available in fifteen countries and an early, hard-won reputation for creating a line of seven amazing, aromatic, award-winning examples of liquid Irish pride.
Hyde No. 7 is a 6 year-old Irish Single Malt. It was distilled using a copper pot still and aged from start to finish in first-fill Oloroso Sherry hogshead casks. And it is bottled without additives or chill-filtration at a spot-on perfect 46% ABV.
Those are some lovely statistics, but the proof is always in the dram. And in that bottle you will find everything you love about Sherried Irish Whiskey — rich notes of oranges and chocolate truffles over a base of stone fruits. A happy day ensues.
