Hibernia Distillers is fairly new, being founded in 2014 by brothers Conor and Alan Hyde in the wee town of Skibbereen, Ireland. But in two short years this small-town maker of traditional single malt and single grain Irish Whiskey is rocking the world with products available in fifteen countries and an early, hard-won reputation for creating amazing, aromatic, award-winning examples of liquid Irish pride.
Hyde No. 3 is a 6 YO Irish Single Grain Whiskey. That means it comes from a single distillery, but not that it is all barley. In this case, it is a mixture of corn and barley. It is also aged in 100% ex-Bourbon casks from Jack Daniels Distillery in Kentucky (Frank Sinatra’s favorite). But they follow VERY traditional Irish Whiskey methodology, including triple distillation in a copper “Coffey Still” and no chill filtration.
