Port-finished Irish Whiskey delight.

The Hyde family have been involved in the Irish drink business for quite some time: they owned a famous West Cork bar between 1640 and 1962 where they sold Irish Whiskey and Stout on tap. Their bonded Whiskey was so fine it was the stuff of legend. Today, the family doesn’t own a bar anymore, but they’re still an important part of the industry. Alan and Conor Hyde are prominent bonders and purveyors of fine Irish Whiskey, and their name is still a celebration of tradition, know-how, and legacy.

Hyde No. 9 Iberian Cask is a superb thrice-distilled gem that was matured in charred ex-Bourbon barrels for eight years before it was moved to succulent Tawny Port casks from Northern Portugal for another nine months. It’s a limited affair and certainly worth your attention.

The fruit-forward palate brings notes of green apples, dried fruit, and hazelnut, giving way to lingering notes of honey, citrus, spice, vanilla, and black pepper.

Finish
A medium to long finish with a malty and spicy echo.

Pretty distracted when sampling unfortunately. The cinnamon and spice was very forward for me. It’s a pleasant drink but not my favorite

Complex with notes of spice, raisin, licorice, soft vanilla oakiness, and strangely enough, Play-Doh in the aroma. Spice, licorice and vanilla carry over to the mouth with some dried fruit as well. A bit of a harsh edge to the lingering finish, but this is still quite an enjoyable whiskey.
