The ancient Chinese city of Luzhou has a millennia-long tradition of winemaking and the Luzhou Laojiao Distillery comes from that rich history, equipped with old-school gear and knowledge. From their stills comes a wonderful Spirit called Baijiu. It may be less known to Westerners, but it’s actually the largest Spirit category in the world. It’s a white Spirit mostly made from sorghum, a fun grain native to Asia, Africa and Australia. Sorghum is fermented in so-called Baijiu pits and the Laojiao Distillery still uses pits that have been operational since 1573! The traditional wisdom has it that the longer sorghum spends in those pits, the more complex Baijiu becomes.
Ming River Baijiu is a balanced and complex Spirit, known to be the original Sichuan Baijiu. It’s distilled in traditional Chinese pot stills and matured for up to two years before the Master Blender creates the perfect potion. Pour yourself a glass of this ancient beverage and enjoy it neat at room temperature, although its sweet and bold profile will make any cocktail richer.
