A wonderfully exotic Dry Gin that shimmers in a brilliant Sapphire Blue, but transforms in your G&T.
Max Muggenthaler is a dentist in Munich. Tim Steglich is a certified business economist. One day back in 2015 they conceptualized The Illusionist Gin — a distinctly natural, organic Gin with a fruity and floral flavor profile and brilliant color. That color would change when mixed — a kind of Magic of Mixology. They launched their Gin locally in 2016 to select, high-end bars where it quickly became popular. Only now is this delightful gem finding its way to the broader market.
The Illusionist Dry Gin is a delicious premium Gin that is also a bit of a parlor trick. The infusions include sixteen botanicals, including an exotic Far East flower called Butterfly Pea Blossom. These lovely petals impart a radiant sapphire blue color tone to the Gin. It really is quite striking. But this is also where the "illusion" comes in. You see, when this naturally blue Gin comes into contact with tonic water, a gentle reaction transforms the color into a soft pink hue. What you have is a Gin that is lovely on the eye and on the palate.
Smartass Corner:
Phenols and polyphenols give many fruits and flowers their color. Phenol blue is present in many blue flowers and it reacts with the pH level in liquids, changing to shades of pink and red.

Appearance / Color
Bright Sapphire
Nose / Aroma / Smell
The aroma is bright with florals and citrus lying over pine and eastern spices.
Flavor / Taste / Palate
In many ways the profile leans toward a classic Dry Gin, but with a broad fruit note, clearly define florals, and a hit of mixed citrus zest over the juniper notes.
Finish
The finish is clean with a lingering fruit tone.
