The Quiet Man’s classic Irish Single Malt has been perfectly aged and then finished in the finest Sherry Casks.

As a boy, Ciaran Mulgrew would sometimes go to work with his dad at the local pub where he was a barman. As he tells it, while tending bar he would hear stories told by patrons. But he kept those stories quiet as a confessional. He was the Quiet Man. Ciaran has since spent his career in the drinks business and named his Irish Whiskey after his father in this way. The Quiet Man Whiskies are made by his Niche Drinks company which is a subsidiary of Luxco, which as of 2021 is owned by MGP. But Niche Drinks is left alone in Ireland to keep on doing exactly what they have been doing from the start — making great Irish Whiskies and Cream Liqueurs.

We’ve had a chance to taste three wood-finished versions of The Quiet Man’s brilliant Single Malt — all of them delightful in their own way. The latest is The Quiet Man 12 Year Old Sherry Finish. Just like its sister drams, the Sherry-finished version starts with their 100% Irish Single Malt loveliness that has been aged for twelve years in ex-Bourbon casks. Then they deploy those famous Oloroso Sherry casks from the Jerez and Montilla-Moriles regions of Spain that do such wonderful things to Single Malts. And of course, this Irish beauty is bottled at 46% ABV.

Nose / Aroma / Smell
The aroma has the cocoa and grains background of the core Single Malt but adds notes of sultanas, honeydew, vanilla, and cream on top.

Flavor / Taste / Palate
On the palate the Sherry notes expand to an interesting Rum and rancio note on the base followed by apple and milk chocolate.

Finish
The finish is medium-to-long with a note of chocolate praline.
