Even large single malts marry casks in large vats before bottling so that the Master Blander can try to make them all taste the same. That’s why Chapter 7 specializes in single cask limited editions.
They experiment and defy traditional conventions when it comes to Whisky. Chapter 7 is the brainchild of Selim Evin. He thinks that each cask should tell its own unique tale, so he travels to Scotland and Ireland to hand select single casks from the inventories of the world’s greatest distilleries. Some renowned, some less known. You get to experience the particularity and uniqueness of each cask. How many bottles are filled? Well, until the barrel is empty.
They took a slightly different approach with Chapter 7 Peatside Blended Malt Scotch Whisky, since this is the first blended malt produced by the company. It is at least 6 years old, vatted together from a combination of different Speyside Whiskies and matured in a barrique Tawny Port Cask for 8 months, before being bottled at 46% ABV. Exactly 429 bottles were produced from the cask at hand. How many are still out there? Not much, we can vouch for that.
The end result is a peaty, elegant and balanced Whisky, with complexity that drams twice the age would be proud of. It definitely doesn’t act his age and that’s a good thing. The Spirit received the prestigious Liquid Gold award handed out by the Whisky Bible, which celebrates the very best the Whisky world has to offer. Considering the plaudits received and the exclusivity of the bottling, you better get a move on, if you want one for yourself.
