We now follow the Atlantic coastline down to West Cork, a rugged maritime region where wild shores and salty winds shape both people and spirits. It’s here that West Cork Distillers was founded in 2003 by three childhood friends—John O’Connell and cousins Ger and Denis McCarthy—two former fishermen and a food scientist.
What began in a small backroom operation has grown into Ireland’s largest wholly Irish-owned distillery, based in Skibbereen. Their mission has stayed simple: use local ingredients, embrace innovation, and bottle the character of County Cork.
Your whisky, Maritime Sherry Cask Finish Single Malt, starts its journey triple-distilled and aged in bourbon barrels. It is then finished in hand-picked sherry casks, which layer in rich notes of red fruits, plums, cherries, and soft spice. Bottled at 43% ABV and non–chill filtered, it offers a velvety texture and a sweet, gently spiced finish.
